Rainy day baking.....

It's a wet, dark and gloomy day to welcome in Autumn.

The kind of day to stay inside and make, bake or create something.

So partly because the weather called for it.....but mainly because I was feeling hungry and in the mood to stuff my face.......I decided to whip up a batch of my Mum's world famous Ginger Biscuits....ok, so they're more sort of family famous than world famous...but you get the drift.

 I got all the ingredients together....I do this because otherwise I can be guaranteed to forget something very significant....and I have been known to use the wrong something significant.


Into a saucepan goes 125 grams of butter....


....a quarter of a cup of Golden Syrup and a quarter of a cup of water....


.....half a teaspoon of Bicarb Soda....


 ....and put it onto a gentle heat.....


....just enough to melt the butter....oh and stir it well.


Then you need to sift the dry ingredients together into a bowl.  You'll need 2 cups of Self Raising Flour....I repeat Self Raising Flour....the double check is for my benefit....I'm sure you never mix up your flours.  You also need 2 teaspoons of ground ginger and three quarters of a cup of lightly packed brown sugar.  Brown sugar must be a male...because most females I know....especially myself....find it impossible to lightly pack at any time.


Once they are nicely sifted into your bowl.....


...you add the butter mixture....


....and give it a good old stir.


Let the mixture cool a little....and then roll it into small balls....about the size of a walnut....but I'm greedy I like my balls bigger than that.....


.....press them down with a fork.....


....and place them in a moderate oven for 10 to 15 minutes.


They're done when they look all golden brown....and smell delicious.  Mine are a bit stuck together....probably because my balls are too big!!


Get a cuppa....plonk yourself on the lounge....put your feet up.....turn on some trashy TV and enjoy :)

    1. Aaahh.....you can never be too sure if you're going to get the jaw breaking variety or the soft, squishy variety....that seems to be the luck of the draw :0)

    1. Mum always used to press her biscuits with a fork...I'm not sure if it's a universal thing or just a "her" thing :)
